- Miso Soup
A light vegetable soup seasoned with unpasteurised mugi miso containing dulse seaweed, tofu and spring onion. Miso is a paste made from soybeans, salt and grain and fermented by a special enzyme called koji. We only use the unpasteurised mugi miso in our deli. This is allowed ferment from 6 months to 2 years.
Miso provides excellent nutrition. It is rich in protein, contains B12 and because it is a live food it aids digestion. The inclusion of seaweed in our soup provides iron and calcium. It is also a blood purifier.
